The 7.5-inch long, 1.5-inch-wide 18/10 stainless-steel knife and spreader accompanying the cheese block echoes the theme with an acacia accent. Designer Neil Cohen uses acacia, a dense, durable hardwood, not only for the beauty of its finely patterned grain of varying shades but for its practicality. Being naturally resinous, acacia will not absorb stains or cheese odors. The block can be hand washed with warm soapy water. Because the knife and spreader made of 18/10 stainless steal and are rust-resistant they are considered dishwasher safe.
